Sometimes it seems like the beginning of fall can be even busier than the end of summer!  We headed to the lake cabin 2 weeks ago as I mentioned to celebrate my husband’s 30th birthday and we had a blast but felt like we needed a vacation from our vacation when we got home!  I love getting together new groups of friends and cooking and cocktailing together.  Everyone pitched in to help in the kitchen and I followed through with making those Lemon Poppy Seed Pancakes I told you about awhile ago.  They were just as wonderful as I had hoped they would be!

Light and fluffy pancakes with a subtle lemon essence and a nice crunch from the poppy seeds, made for perfect pancakes in my book.  We topped them with some pure maple syrup, made some bacon to offset our sweet breakfast and poured up some mimosas to sip along with them.  This recipe was great for a weekend crowd because it made about 20 pancakes.

Lemon Poppy Seed Pancakes

LIght and fluffy pancakes with a subtle lemon essence and sprinkled with poppy seeds
Ingredients
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 Tbsp sugar
  • 2 Tbsp lemon zest
  • 2 cups buttermilk
  • 2 eggs
  • 2 tsp vanilla
  • 2 Tbsp lemon juice
  • 4 Tbsp unsalted butter, melted
  • 2 Tbsp poppy seeds
Instructions
  1. Heat a nonstick griddle or grill pan over medium heat.
  2. In a small bowl, combine sugar and lemon zest.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt and poppy seeds. Add lemon sugar and mix.
  4. In another medium bowl, combine buttermilk, eggs, vanilla, lemon juice and melted butter and whisk together.
  5. Pour wet ingredients into dry and mix well to combine.
  6. Use a ½ cup measuring cup to pour pancakes onto griddle and cook until bubbles form over entire surface, then flip. Cook another 2 minutes or until cooked through. Repeat with remaining pancake batter.
  7. Serve with warm maple syrup (blueberry syrup would also be delightful with these pancakes).
