Hello Sweet Teeth and Happy 2013!

I am back from my exciting midwestern holiday adventure and anxious to share some great recipes with you this year.  I had a spectacular holiday with my family and I hope that yours was just as lovely as mine was.

I brought almost all of the Christmas cookies that I shared with you home with me and there is just something so satisfying to me about arranging a giant platter of cookies and candies and watching the delight on the faces of the people you share them with.  After all, sharing with others what I have created is the primary reason I enjoy baking and spending time in the kitchen as much as I do.

Of all of the cookies that I made, the ones that got eaten the fastest were not a “Christmas” cookie at all and actually, they were a complete afterthought for me!  I had never used browned butter for any recipe and I had been excited to try a chocolatey cookie and infuse it with the nutty goodness of browned butter that I keep reading about!  So these Brown Butter Double Chocolate Sea Salt Cookies were a last-minute addition to my holiday baking.

I was so happy with how easy it was to brown the butter and everyone commented about the fabulous rich flavor the cookies had!  It didn’t hurt that I packed them full of Guittard Semi-Sweet Super Cookie Chips and Ghiradelli Milk Chocolate Chips.  The combination of the sweet milk chocolate and more bitter giant semisweet chips was a chocoholic’s dream come true.  And just so that the cookies weren’t too sweet (can that happen??) I sprinkled with them with giant flakes of sea salt to offset the chocolate.

Since I like my cookies soft and chewy, it was also a bonus that these cookies stayed soft in the middle for almost a week.  Heed my warning that if you swoon for melty chocolate and can appreciate the warm, nutty flavor that browned butter brings, these cookies may be very dangerous ;).

Brown Butter Double Chocolate Sea Salt Cookies

Prep Time: 2 hours

Cook Time: 12 minutes

Yield: 3 dozen cookies

Warm and nutty brown butter infused cookies with melty semi-sweet and milk chocolate chips and finished with a sprinkle of sea salt

Ingredients

  • 1 cup (16 Tbsp) unsalted butter
  • 1 1/4 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg plus 1 egg yolk
  • 2 teaspoons vanilla
  • 2 1/4 cup flour
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon of salt
  • 3/4 cup semi-sweet chocolate chips (I used Guittard Semi-sweet Super Cookie Chips)
  • 3/4 cup milk chocolate chips
  • Coarse sea salt for sprinkling

Instructions

  1. (*Note, this cookie dough must be chilled for at least two hours so that the cookies stay thick.)
  2. In a medium saucepan, heat butter over medium heat, whisking constantly. The butter will begin to foam and then brown at the bottom. Watch the butter closely and remove it from heat immediately when you begin to notice browning, so that the butter does not burn. Immediately pour the browned butter into a large mixing bowl and set aside to cool for 5 minutes.
  3. Once the butter has cooled slightly, add sugars and mix to combine. Add the egg, egg yolk and vanilla and mix well.
  4. Add the flour, baking soda and salt and mix until well incorporated.
  5. Mix in chocolate chips, cover bowl with plastic wrap and refrigerate for at least 2 hours and up to overnight.
  6. Preheat oven to 350 degrees.
  7. Form dough into golfball-sized balls and place onto cookie sheets 1 1/2 inches apart. Sprinkle lightly with sea salt.
  8. Bake 10-12 minutes or until the edges are lightly browned and set. The middles of the cookies may appear underdone, but they will continue to bake after out of the oven.
  9. Let cool on cookie sheets for 10 minutes then place onto a wire rack to cool completely.

    i am a HUGE sucker for brown butter in my desserts. Especially cookies. I am blown away Mercedes – these cookies look incredible. both kinds of chocolate chips – i like your style. 🙂 and they past the cookie test – staying soft after a few days!
